Curry Lentil Soup
- fry diced onions and chopped carrots for 3 mins
- add the following, then fry for 2 minutes:
- grated or diced garlic and ginger
- tumeric powder
- curry powder
- red pepper flakes
- add the following, then simmer for ~30 minutes:
- rinsed lentils
- vegetible broth
- crushed tomatos
- peeled and diced potatoes
- chopped kale
- salt and pepper
Notes:
- I used 1 big carrot, 1 big potato, 14oz can of diced tomatos, 1 cup of lentils, and 3 cups of veggie broth
- No chopped kale this time, didn't have...
- I tried making enough just for me, but this was a lot of food... Probably enough for 3-4 people
- Could probably do half a potato and 1/3 cup of lentils.
- It wasn't that 'soupy'. Maybe use a larger ratio of broth to lentil
